Vegetarian Recipe

If this doesn't make your mouth water, is it fair for me to say you are crazy?
I am a huge fan of mushrooms I used to hate them when I was younger but I grew to love them. Now I cant stop eating them, they are so delicious.

This is Mushroom Quinoa, I love this recipe.

Quinoa if you don't already know, is crazy nutritious. 
1 cup of cooked quinoa has 8 grams of protein, 5 grams of fiber, 58% manganese... 58%!!!
 30% magnesium, 28% phosphorus,  19% folate,18% copper, 15% iron, 13% zinc, 9% potassium, vitamins B1, B2, B6.

Mushrooms are a source of important minerals such as selenium, ergothioneine, copper, beta-glucans and potassium. They are a antioxidant, help blood pressure, protect body cells from being damaged which could cause heart disease and some cancers. 

To make this delicious dish you will need....

Produce- 1 lb mushrooms ( or as many as you wish )
5 garlic cloves
1/2 tsp thyme, dried

Grains - 
1 cup quinoa

Spices - 
kosher salt and ground pepper

Oils - 
1 tbsp, your choice of oil

Dairy -
2 tbsp parmesan

Although I hate to shove my opinion of being a vegetarian down peoples throat, of course I think not only is it amazing for your health but think of all the cute animals you would be saving!!!
I have chosen the best vegan / vegetarian recipes ( In my opinion ) that could turn any carnivore into a herbivore.



 So this is vegan spaghetti squash mac and cheese.
who doesn't love a good mac and cheese?

Spaghetti squash contains omega- 3 and omega-6 essential fatty acids, which help prevent heart disease, inflammation occasioned by arthritis and different types of cancer. They are a great source of vitamin A & C.. which is an antioxidant. 

So you can have your cake and eat it to with this meal. Its a win - win!!



RECIPE: 

Produce - 2 cups broccoli
1 spaghetti squash

Oils - 
1 tbsp of your choice oil

Spices -
1 tbsp red pepper flakes

dairy - 
1 tbsp Ghee
1 cup reduced fat cheese
1/2 cup Parmesan
1 cup low fat milk

VEGAN CHEESE RECIPE:
If you don't want any dairy this will be your substitution!

2 -3 cups chopped cauliflower
1/2 cup water
2 tsp garlic powder
1/4 cup nutritional yeast
1 tbsp lemon juice
2 tbsp soy sauce or tamari
1/4 tsp turmeric powder

cook the cauliflower for 10-15 minutes and blend it until smooth with the other ingredients.

CAFE

For my First post,

I am super excited to share this with you.
My all time FAVORITE cafe in the world, "Nourished On The Go" they know me by name.. its embarrassing but hey! their food is amazing.
I recently found out about this place, I was sick of the usual veggie subs up by my work. So I decided to research vegan restaurants ( yes i am vegetarian ) I eat cheese so I don't consider myself a full vegan. But anyways, I found this cute little cafe and I eat there now 3-4 times a week.
It is all vegan home made food.
Sorry all vegan HEALTHY home made food made with only the best ingredients, cant get any better than that.

I have tried almost everything on their menu, I can honestly say i have not tried one bad thing on their menu.. but...

My personal favorite things to order are the

No-Chicken Souvlaki 

No-Beef Stew 





They are a definite try!!!
