I am a huge fan of mushrooms I used to hate them when I was younger but I grew to love them. Now I cant stop eating them, they are so delicious.
This is Mushroom Quinoa, I love this recipe.
Quinoa if you don't already know, is crazy nutritious.
1 cup of cooked quinoa has 8 grams of protein, 5 grams of fiber, 58% manganese... 58%!!!
